TARTA DE QUESO DE CÍTRICOS CON CORTEZA FILO FILO

Los bordes crujientes y con volantes de este pastel de queso con incrustaciones de naranja se ven tan impresionantes que es difícil creer lo fácil que es preparar este postre festivo. Busque las láminas de masa delgadas como papel llamadas filo (a veces escrito filo) en la sección de alimentos congelados del supermercado. Aunque la tarta de queso es rápida y fácil de hacer, deberá enfriarse durante al menos 4 horas antes de servir, así que planifique en consecuencia.

CORTEZA FILO
10 hojas de masa filo, descongelada como indica el paquete
4 cucharadas de mantequilla sin sal, derretida
1/4 taza de azúcar

RELLENO
2 paquetes (8 oz) de queso crema, suavizado
2 huevos grandes
2/3 taza de azúcar
1 cucharadita de extracto de vainilla
2 cucharaditas de ralladura de naranja o ralladura de limón finamente rallada
1/4 cucharadita de sal kosher

ADICIÓN
1/4 taza de mermelada de naranja o limón (opcional)
2 cucharadas de pistachos picados (opcional)

Si su parrilla lo permite, coloque una parrilla en la posición media. Precaliente el Traeger con la tapa cerrada a 350°F; esto tomará alrededor de 15 minutos.

Prepare la corteza: tenga a mano un trozo grande de papel pergamino para apilar las hojas de masa filo. Manteniendo las hojas de filo cubiertas mientras trabaja para que no se sequen, coloque una hoja de masa filo sobre el papel pergamino y úntela con mantequilla. Tome una segunda hoja y gírela ligeramente para que los extremos no coincidan, colóquela encima de la primera hoja. Pintar con mantequilla y espolvorear con una cucharadita de azúcar. Continúe colocando capas con láminas de masa filo, girando cada una ligeramente, untando con mantequilla derretida y espolvoreando con azúcar hasta que se haya utilizado toda la lámina excepto la última. Coloque la hoja final encima de la pila, pero déjela normal (sin mantequilla ni azúcar

Transfiera la corteza de hojaldre del pergamino al molde desmontable, desechando el pergamino. Presione suavemente la pila de hojaldre en la sartén, permitiendo que los bordes sobresalgan.

Haz el relleno: En el tazón del procesador de alimentos, combina el queso crema, los huevos, el azúcar, la vainilla, la ralladura de naranja o limón y la sal. Procese hasta que quede suave, alrededor de 1 minuto. (Alternativamente, combine los ingredientes en un tazón y bata con una batidora eléctrica).

Vierta el relleno en la corteza preparada y alise la parte superior con una espátula compensada. Deje que los bordes irregulares de la masa filo caigan hacia adentro de forma natural. Coloque el molde desmontable en una bandeja para hornear con borde.

Coloque la bandeja para hornear directamente sobre las rejillas de la parrilla, cierre la tapa y hornee hasta que la corteza esté dorada y el centro de la tarta de queso esté casi listo, de 30 a 40 minutos. El tiempo variará según el clima, la posición de la parrilla y el modelo de parrilla; Comience a verificar en el lado temprano.

Retire la tarta de queso de la parrilla y enfríe a temperatura ambiente durante 1 hora. Transfiera el molde desmontable al refrigerador y enfríe sin tapar durante al menos 4 horas antes de servir. (Puede cubrirlo después de 4 horas, y el pastel puede prepararse con 24 horas de anticipación y mantenerse refrigerado).

Para la cobertura: en un tazón pequeño apto para microondas, caliente la mermelada hasta que esté ligeramente líquida, de 20 a 30 segundos. Retire el anillo exterior del molde desmontable, luego vierta el glaseado sobre el relleno de tarta de queso y extiéndalo uniformemente con una espátula. Cubra con pistachos picados como desee, rebane y sirva. ¡Disfrutar!

This easy-to-make favorite is rolling with Traeger’s signature wood-fired flavor. Serve this sweet treat for breakfast or dish it out for dessert. Prep Time 1 HR 30 MIN Cook Time 20 MIN Pellets PECAN SERVES 8 INGREDIENTS MAIN 1/2 Ounce (2 packets) active dry yeast 1/3 Cup plus 1 teaspoon cane sugar 1 Cup warm water (110°F to 115°F) 5 Cup all-purpose flour, plus more as needed 2 Teaspoon Salt 1 Cup warm milk (110°-115°F) 1 Large eggs As Needed oil 1/2 Cup butter, softened 1 Cup brown sugar 2 Tablespoon cinnamon CREAM CHEESE ICING 4 Ounce cream cheese, room temperature 1/2 Cup butter, room temperature 2 Cup powdered sugar 1/2 Teaspoon vanilla 1 Teaspoon milk Pinch Salt STEPS 1 Place the yeast, 1 tsp of sugar, and the warm water in a mixing bowl or the base of a stand mixer. Stir to combine. Allow the yeast to proof for 5 minutes, it should start to bubble a bit, showing that the yeast is indeed alive. 2 Sprinkle the flour, salt and remaining 1/3 cup sugar over the yeast mixture. Using a dough hook or wooden spoon, stir for 30 seconds. Pour in the warm milk and egg. 3 Knead again on the medium-low setting, or on a floured work surface by hand until the dough is very soft, adding up to one more cup of flour so the dough is soft and smooth and has lost its sticky quality. 4 Coat the bowl with a small film of oil and place the dough in the bowl, turning to coat the dough evenly with oil. Cover the bowl with a clean cloth, place in a warm spot in the kitchen and allow to proof, about 45 minutes. The dough will have almost doubled in size. 5 In a small bowl combine the softened butter, sugar, and cinnamon. 6 Punch down the dough and roll out into a rectangle on a floured work surface. 7 Spread the cinnamon butter mixture over the top of the dough and roll up into a log. 8 Cut the dough into rolls about 2" thick. Transfer rolls to a buttered baking dish or cast iron and lightly cover with a kitchen towel. Let the rolls rise again until doubled in size. 9 When ready to cook, set the temperature to 325℉ and preheat with the lid closed for 15 minutes. 10 Place the baking dish or cast iron directly on the grill grate and bake the rolls until lightly browned, about 20 minutes. 11 For the Icing: place cream cheese and butter in the bowl of a stand mixer fitted with a paddle attachment. Mix together on medium speed until combined. Reduce the speed to low and add in the powdered sugar slowly. Add vanilla, a pinch of salt and milk and mix to combine. 12 Remove the rolls from the grill and spread icing on top while the rolls are still warm. Enjoy!
