RIB-EYES AHUMADOS TRAEGER CON MANTEQUILLA DE BOURBON

INGREDIENTES

MANTEQUILLA BOURBON
1/2 taza (1 barra) de mantequilla sin sal, temperatura ambiente
2 dientes de ajo, picados
2 cucharadas de bourbon
1 cucharada de cebollín fresco picado o cebollas verdes
1 cucharada de perejil fresco picado
1/2 cucharadita de sal kosher
1/2 Cucharadita de pimienta negra recién molida
OJOS DE COSTA AHUMADOS
4 filetes de costilla (de 1 pulgada de grosor)
Al gusto Traeger Prime Rib Rub

Prepare la mantequilla de bourbon: en un tazón pequeño, mezcle la mantequilla, el ajo, el bourbon, las cebolletas, el perejil, la sal y la pimienta con una cuchara de madera hasta que estén bien combinados. Refrigere hasta que esté listo para su uso.

Cuando esté listo para cocinar, configure la temperatura Traeger a 180 ℉ y precaliente con la tapa cerrada durante 15 minutos. Para un sabor óptimo, use Super Smoke, si está disponible.

Sazone generosamente los bistecs con Traeger Prime Rib Rub.

Inserte la sonda en el centro de un bistec, evitando el hueso y las bolsas grandes de grasa. Coloque los bistecs directamente sobre las rejillas de la parrilla, cierre la tapa y ahume durante 1 hora.
Retire los filetes de la parrilla. Aumente la temperatura de la parrilla a 500 ℉.

Cuando la parrilla esté caliente, devuelva los bistecs a la parrilla y vuelva a insertar la sonda. Cierre la tapa y cocine, volteando una vez, hasta que la temperatura interna alcance los 135 ℉ para que esté medio cocido, de 6 a 8 minutos por lado, o la temperatura que desee.

Transfiera los bistecs a una fuente para servir e inmediatamente cubra cada uno con un poco de mantequilla de bourbon. Deje reposar la carne durante 3 minutos antes de cortarla o servirla. ¡Disfrutar!
