TRAEGER ORANGE & MAPLE BAKED HAM

This sweet maple and orange marmalade glaze makes for a memorable ham feast, whether around the table for Sunday dinner or Christmas Eve.

INGREDIENTS

2/3 Cup orange juice
1/3 Cup maple syrup
1/3 Cup Marmalade, Orange
1/8 Cup Dijon mustard
1 1/3 Tablespoon apple cider vinegar
1/2 Teaspoon ground cinnamon
1/8 Teaspoon ground cloves
2/3 LB ham

STEPS

When ready to cook, start the Traeger grill, set the temperature to 325 degrees F and preheat, lid closed, for 10 to 15 minutes.

Meanwhile, make the glaze: In a small saucepan, combine the orange juice, the maple syrup, marmalade, mustard, vinegar, cinnamon, and cloves.

Warm over low heat, whisking to combine the ingredients. Remove from the heat and reserve.

Place ham in large roasting pan lined with aluminum foil. Place pan on grill and cook for 1.5 hours.

Open grill and glaze ham with reserved mixture. Continue cooking for another 30 minutes or until a thermometer is inserted into the thickest part of the meat and reaches an internal temperatures of 135 degrees F.

Remove ham from grill and allow to rest for 20 minutes before serving.

Warm remaining sauce and serve with ham if desired. Enjoy!

Crispy Fish Street Tacos cooked on the Blackstone griddle are the perfect way to spice up taco night! With golden, crunchy fish, fresh toppings, and zesty sauce in a warm tortilla, they’re bursting with bold flavor in every bite. Servings 4 Prep Time 10 minutes Cook Time 10 minutes Ingredients 1 pound fresh fish (cut into bite-sized pieces) 2 cups Panko bread crumbs 4 eggs (whisked) Blackstone Tequila Lime seasoning (to taste) Add To Cart Cooking oil (for the griddle) 8 street taco-size flour tortillas Queso fresco or cotija cheese (crumbled) 1 lime (juiced) Mexican crema (for drizzling) Hot sauce (optional) Fresh cilantro (chopped) Directions 1. Preheat your Blackstone griddle to low heat. 2. In a bowl, combine the Panko bread crumbs with a generous amount of Tequila Lime seasoning. 3. In a separate bowl, whisk the eggs. Dip each piece of fish into the whisked eggs, ensuring they are fully coated, then roll them in the seasoned Panko mixture until covered. 4. Drizzle cooking oil onto the griddle. Place the breaded fish on the griddle and cook for about 5–6 minutes, flipping frequently until all sides are golden brown and the fish is cooked through. Remove from heat and set aside. 5. Warm the tortillas by placing them on the griddle for about 30 seconds on each side until soft and pliable. Be careful not to let them crisp up unless you prefer a crunchier texture. 6. Assemble the tacos by placing some crispy fish pieces in each tortilla. Sprinkle with crumbled queso fresco, squeeze fresh lime juice on top, and drizzle with Mexican crema.
